Red Plum Strawberry Pie
I went on another pie hunt through my book and the interwebs and I came across an Apricot Strawberry Pie that sounded quite delicious. The thing about apricots though is that they're not in season right now. I decided the best thing to do was to make a substitution so I checked what fruit is related to apricots and turns out they're plums (I thought peaches). So I went to plum city, picked up some plums, and got to baking this pie. I will definitely be baking that apricot pie when they're in season, but for now enjoy this tasty delight.
Slice and pit your plums and hull and slice your strawberries.
Pour sugar over your pitted and sliced plums.
Add your lemon juice.
Mix well and set aside to juice for 20 minutes.
Mix in your conrstarch or thickening agent.
Add your sliced strawberries.
Grab your pie shell and pour your fruit filling into it. Preheat your oven to 400°F.
I really like the way this pie looks. I've been looking for a photo to blow up and hang on my wall.
I was going to do a full top crust with words cut into it, but I failed. Instead I went with a lattice crust. Bake for half an hour and reduce to 375°F for another half hour.
It was a good pie but didn't really stand out as an awesome pie. When apricots are in season I'll give this another go.
