Strawberry Custard Pie
Lately every time I go to the market it's strawberry city. I've got to make a pie out of something might as well be large juicy strawberries. I looked online for a couple recipes and after reading a few I decided to just make a custard and add blended strawberries to it. It worked wonderfully and it was a fun pie to make.
Start off by blending your strawberries in a food processor. I originally used 7 strawberries, but I didn't think it was enough so I added 5 more.
Make a sugary custard by simmering some of your sugar, cornstarch, salt and water. When the liquid begins to thicken add the rest of your sugar, and once it's nice and thick melt in your butter.
Allow your sugary custard to cool and then grab your blended strawberries.
Mix in your strawberries and set aside.
Grab your fully prebaked crust and fill it with strawberries however you like. I decided to mountain my larger strawberries around the pie.
I then chopped up the rest of my strawberries and filled in the empty spaces.
Poured my strawberry custard over the top of that and let it settle into every groove around every strawberry.
Strawberralicious.
Don't forget a dolop of whipped cream.
