Apple Mango Pie
I first imagined this pie several years ago, and am finally after much trial and error closing in on the perfect apple mango pie recipe. After using mangos in an assortment of different ways I've figured out what works best. After baking the awesomely delicious Pear Cranberry Pie it opened my eyes to the usability of dried fruits in pie. This time, instead of using fresh mangos, I opted for dried mangos. The dried mangos did it. The pie was fantastic! Some tweeks still need to be made, but I'm one step closer to being ready for 2010's National Pie Championships.
After several different varations of an apple mango pie I'm finally closing in on perfection.
Back when I had visions of pie floating around my head apples and mangos were the two fruits I wanted to meld together. Now that I've made my pie visions a reality, and have learned a lot about pie baking, my own apple mango pie recipe is just about ready.
My new apple peeler/corer/slicer really allows me to get my apples ready a lot quicker.
A squeeze of lemon juice and some zest.
I think there's about a dozen granny smith apples in that shell.
See those tiny little pieces of dark orange sticking to the apples, those would be your mangos. Tiny morsels of deliciousness coating each and every slice of crisp delicous apple.
Quite the mound.
I still need to work on putting on the right amount of egg wash at the right time. As well as adjust time and temperature for it being a much larger pie.
Just look how perfect the slice came out. I'm really feeling good about this years competition.
