Strawberry Lime Pie
Another day another pie, but today is a special day. Why? Because PieADay.com is 1 year old today! A year ago today I posted my first pie, an Apple Pear White Wine Pie. It was amazing, and since then I've made around 70 different amazing pies. I haven't kept up with a pie a day since last April 1st, but so far in 2010 I've been pieing strong. With the National Pie Championship and Festival at the end of the month and many more pie ideas floating around my head hopefully the rest of 2010 will be great for PieADay.com. I can't stop baking pie so here's another one, a Tastyface of a pie, strawberry & lime hanging out in a pastry of deliciousness.
These two just look right for each other.
Gather your ingredients.
Pour your thawed limeade in a bowl.
Add your lime zest.
Add your sugar.
Add your cornstarch.
Mix thoroughly.
Grab your sliced strawberries and pour your lime mixture over them. Preheat the oven to 400°F.
Prepare your pie crusts. I decided to use two full crust.
Crimp your edges and vent your top crust and place in the oven to bake for 30 minutes. Reduce the temperature to 375°F and bake for an additional 15 minutes.
The liquid did reduce down significantly, but it was still watery. Poured over some vanilla ice cream it was perfect.
