Blueberry Lime Pie
So I went to Cabo. Awesome weekend hanging with friends, and I baked a pie. I only brought a pie tin, and hoped what I needed was there. Of course only a few things were, but I made do with what I had available. I've made this pie before, but I wouldn't say this pie is an improvement. The filling was really juicy, but poured over some ice cream, it was great.

There wasn't a rolling pin around so I cleaned, and used one of the large bottles of Corona we had bought.
My buddy Dan took some pictures. Here I'm venting the dough for the top crust. I couldn't find any crisco at the market, and I didn't want to buy a bunch of lard just for the pie. Instead I just used butter.
I also couldn't find any frozen lime concentrate so I just used a bunch of fresh lime juice, the blueberries, sugar, and flour to try to thicken it up since I did't have cornstarch either.

I pinched the two crusts together and crimped the edges. Baked it for an hour at 400°F.
Here's the finished product. The all butter crust plumped up and browned real nicely.
This my favorite pie.
It being overly juicy didn't stop us.
With ice cream it was amazing!
