Blueberry Lime Pie
This is by far my favorite of all the pies I've made. It's extremely easy to make and super tasty. When I first read this recipe in Ken Haedrich's Pie, I knew the blueberry lime combination had to be good. They aren't two fruits you'd imagine would get along in the fruit kingdom, but, damn it, if they don't love chillin' together in a pie. I'm very happy with the way this pie came out. The pie crust is the best I've made so far, the filling is taste-ilicious, and the smell is amazing. I baked this pie for a picnic with some friends. Nothing beats sharing a pie with awesome people.
Start by preheating your oven to 400°F.
Grab your 1 lb of frozen blueberries and empty into a bowl.
Add 1/3 cup frozen, thawed limeade.
Add 3 tbsp sugar.
Add 3 tbsp quick-cooking tapioca.
Mix everything together well.
Add 1 tsp lime zest.
Once more, mix it all together well, and grab your bottom pie crust.
Fill your pie shell with your blueberry mixture. Moisten overhang of pie crust with milk.
Place your top crust over your filling. Press the two crusts together, and create a ridge with your fingertips.
Sprinkle sugar over your top crust and lightly coat with milk.
Vent your top pie crust however you like.
