Strawberry Rhubarb Pie
I finally made a rhubarb pie! Strawberries are all over the place right now and thus are super cheap. Saving money is a priority in a lot a peoples lives so if you want some pie do yourself a favor and make it a strawberry one. When you think strawberry pie, the first thing that usually comes to mind is strawberry rhubarb, but what is rhubarb? I didn't know until I baked this pie and it blew my mind. I can't describe the taste, but it's a stalk like celery, and when baked it becomes real soft and just melts in your mouth when you eat it. Combined with strawberries it is perfect, and I wouldn't be surprised if rhubarb worked well with a few other fruits. Here it is my first rhubarb pie and definitely not my last.
Start by hulling and slicing your strawberries. Usually I just slice off the top of strawberries, but hulling them means to remove the bitter inner center part of the stalk. By removing all those little guys you see on the left you'll be left with just sweet strawberries.
You'll also peel and slice your rhubarb. I'm not sure if I was supposed to peel the rhubarb, but it felt right so I did. Then I simply chopped my rhubarb into smaller pieces.
Measure out the rest of your ingredients.
Add your chopped rhubarb to your sliced strawberries.
Toss to mix.
In a separate bowl mix together your dry ingredients including your corn starch.
Preheat the oven to 425°F.
Sprinkle a layer over the top of your fruit mixture and gently toss. Repeat until you've used all your dry mix.
Add your vanilla and mix well one final time.
Grab your crust and transfer your fruit mixture into it.
Strawberries are super cheap right now so I suggest you go buy a bunch and bake some pies.
Dot the top with butter and lay down your top crust. Bake for 15 minutes, reduce the temperature to 375°F and bake for an additional 60 minutes.
Remove from the oven and allow to cool. As you allow the pie to cool it will thicken up. If you cut into it too soon it will be very runny. If you've never seen or had rhubarb before this pie is definetly for you. It blew my mind.
