Kiwifruit Pie
Valentine's Day is around the corner, and I can't think of a better gift for your Valentine than a homemade pie. My buddy Evan can't think of a better gift for his Valentine either and that's why I've prepared this pie for him. As Evan went through all the pies I have on this site he decided that a Kiwifrut pie was what he wanted to make. The only pie I've made with kiwifruit is a Kiwi Lime Pie, which, of all the pies I've made, is my least favorite. I assured him I'd find a good Kiwifruit pie recipe and here it is. Start by peeling your kiwifruit.
Slice up all but 3 of your 12 kiwifruit.
Place your 3 unsliced kiwifruit in a food processor, add your water, and allow it to run until the kiwifruit has blended together with the water.
In a small saucepan mix your sugar, salt, and cornstarch.
Add your kiwifruit/water mixture to your dry mix.
Cook over medium heat and stir constantly. Make sure that all your dry mixture dissolves into the liquid.
Stir constantly and bring your liquid to a simmer. Continue stirring constantly until the mixture begins to glop, instead of drip, off your whisk.
Turn off your heat and melt in your butter.
Squeeze in your lemon juice.
Set aside your kiwifruit custard mixture and allow it some time to cool. Grab your graham cracker crust and your sliced kiwis.
Once your kiwifruit custard has cooled. Start layering your sliced kiwifruit in your graham cracker crust.
Pour your cooled kiwifruit mixture over your sliced kiwifruit.
Allow the custard to settle in and use a spatula to spread it out.
Now that your pie is complete allow it to chill in the refrigerator for at least an hour before serving. Serve with some whipped cream if you'd like but it's also delicious as is.
