Greengage Pie

3 months ago I was competing in the National Amateur Pie Championships. Since then I've cut back on the time I've dedicated to making pie, but not to thinking about pie. Every time pie comes up I've been taking note and I have several treats in to store for you soon, but let me get to the point of this post.

Have you ever had a green plum?
Have you ever heard of a Greengage?
...
Me neither.
At the beginning of summer a new farmers market started right around the corner from my house and I had to check it out. Strolling along I noticed a vendor with a sea of peaches, plums, apricots, nectarines. It was a reddish yellow collection of fruit, but the visual slap in the face was the green. Upon closer inspection I realized these were not small Granny Smiths, and upon tastier inspection I bought 3 pounds of green plums, Greengages. My goal from the day I first started making pie has been to make a pie of as many fruits as possible, in as many variations as possible, and, I've learned a lot. After tasting this Greengage I was immediately hurled into pie mode and got to it. Pie's are the most deliciously fulfilling dessert you can share with the people you love, and when you discover this fruit, or any other fruit for the first time, know that it wants to be a pie.

One Plum, Two Plum.
Green Plum, Red Plum.
Fun Plum, Yum Plum.

Dry ingredients mixed in one bowl, squeeze of lemon juice over cleaned and sliced fruit. Crust ready to go.
